This is one of my family favorite pies. Derby Pie was created in 1950 by George Kern with the help of his parents. The name “Derby Pie” was chosen because the various family members each had a different name for the creation, so to resolve the naming issue, they put various names in a hat, and pulled out the paper which said “Derby Pie.” Kern’s Kitchen diligently guards their secret recipe, which is known only to a small group of Kern family members and a single Kern’s Kitchen employee (who actually mixes the recipe today). Note: makes 1 9

  • 2 eggs
  • 1 cup of sugar
  • 1 stick of butter
  • 1/2 cup of flour
  • 1 teaspoon of vanilla
  • 1 cup of pecans
  • 1 cup of chocolate chips
  • Step 1 Mix together completely
  • Step 2 pour into unbaked pie shell, I suggest the Easy Pie Crust
  • Step 3 Bake at 350 degrees for 30 minutes until done,
  • Step 4 Note, if the crust begins to brown, cover with foil to keep from burning.
  • Step 5 Serve warm with vanilla bean ice cream or at room temperature with a dollop of whipped cream
